Senior Sous Chef Michael Matera is another one of the Singita staff who has a great backstory. As the eldest son in the family, it was his responsibility to provide and it was while he was employed as a grounds attendant at another Singita residence that the chef noticed how hard he worked. He gave him a job in the kitchen but Michael could only cook staff meals due to his limited English language. After working overtime for many hours, he was rewarded with English classes in the city of Arusha; on his return to the lodge, he started work in the guest kitchen.
A few years ago, his hard work was recognised when he was awarded the accolade of Tanzanian Chef of the Year. He describes how intrigued he was by his job, as it was the first time he had seen such exotic seafood as lobster and prawns, and he was inspired to learn and develop his career as a chef.
